<p>Large and straight, the white 'oniony' section is firm and sweetly flavoured. Topped by dark, blue-green leaves which are also edible and even milder tasting (and the green section is high in Vitamin A).</p><p>A very close relative to the onion, leek is easy to grow in cooler climates. It is slow growing, so for an early crop, seed should be started indoors. When 4-5 inches tall, transplant to a trench 6 inches across and 6 inches deep. Gradually fill in the trench as the plants grow, to keep the bottom section white or 'blanched' (the soil just keeps the sunlight away and prevents chlorophyll turning the leaves green). Does best in a sunny, open location.</p>
