This vegetable can be used in two ways. By picking leaves when young as a cut-and-come-again variety or later, when the stem forms, which can be peeled and thinly sliced for use raw in salads or lightly steamed. Young leaves are ready to pick in 4/5 weeks after sowing. Stems can be picked when 30cm (12in) tall.
